2. Place the oats, peas and milk or water in a saucepan over a low-medium heat. Allow to simmer, stirring every so often.
3. In a separate pan, fry your egg.
4. Once your porridge has reached your fave consistency, add the spring onions and season with salt and pepper to taste.
5. Top with your fried egg, a sprinkling of coriander leaves and, of course, a good drizzle of Sriracha. You could go for a criss-cross pattern as shown, or maybe a swirl or even a few dots.
