What Is Hoi Tod?
Hoi tod is a crispy Thai oyster pancake or omelette that many tourists and visitors in the coastal areas of Thailand fall in love with. The beginnings of hoi tod can be traced to Chinese immigrants who migrated to the country’s coasts many years ago. They brought a variation of the dish from China, and the local Thais adapted it into the dish we know today. The often-requested oyster pancakes can be eaten with Sriracha sauce or vegan Thai Sriracha sweet chilli sauce.
If you’re interested in sampling a variety of Thai dishes while visiting Thailand, hoi tod is a must-try on your list. The dish is also starting to appear in Thai restaurants around the world as people want to experience a wider variety of Thai cuisine.
However, if your local Thai restaurant doesn’t have hoi tod on the menu, you can still enjoy the unique texture and flavour of this authentic dish by making our simple oyster pancake recipe in the comfort of your kitchen.
Ingredients to Make Hoi Tod at Home
The secret to making the perfect hoi tod is achieving the right level of crispness. The ingredients are common in most countries, although if you find Thai-style oysters, it’s always an added plus that adds authenticity to the dish. Thailand has a variety of oysters that are larger and plumper than many of the world’s oysters. The complete ingredients for hoi tod are:
- 200g fresh oysters
- ½ cup rice flour
- 2 tablespoons of cornstarch
- ½ cup of water
- 2 tablespoons of vegetable oil
- 2 eggs
- ¼ cup of chopped spring onions
- A pinch of salt
- A pinch of pepper
Preparing the Batter
Add the rice flour, cornstarch, and water together in a large mixing bowl. Stir or whisk the batter until the mixture is smooth and free of lumps. Season the batter with a pinch of salt and pepper.
Adding Oysters to the Batter
Gently fold the drained oysters and spring onions into your batter and combine well.
Cooking the Pancakes

Heat the oil in a large skillet or wok over medium-high heat until it’s sizzling hot. Pour the batter into the pan and spread it out evenly into a thin pancake. Allow it to cook for 3-4 minutes or just until the edges start to get crispy and turn golden-brown. Then, using a spatula, carefully flip the pancake and allow the other side to cook for another 2-3 minutes.
Adding the Eggs
Crack the eggs over the top of the pancake and spread them out evenly. Allow them to cook for another minute or so until they are set and have turned opaque.
Serving the Dish
Transfer the pancake to a plate and serve with a small bowl of Sriracha or sweet chilli sauce on the side, which you can drizzle over the pancake.
